Before soldering, after every couple of solder joints, and after leaving the iron for a few minutes, wipe the tip on a damp (not wet) sponge or brass wool to remove the surface impurities. You can also use a solder tip cleaner, which chemically cleans the tip of your iron when the oxidization is severe.
